Apple BBQ Crock Pot Chicken – Only 5 Ingredients!

After a few days of company at the lake, I wanted to serve my family something delicious that didn’t take a ton of time or prep work. My ability to fiddle with food in the kitchen had been used up in the days before. I decided to take a stab at an easy recipe I found on FB for Apple BBQ Crock Pot Chicken. I had everything on hand in the freezer, fridge or pantry and it took just a few minutes to throw it all together.

Apple BBQ Crock Pot Chicken

First, gather your ingredients. You’ll need:

  • 2 pounds boneless, skinless chicken breasts
  • 1/2 pack sliced bacon (or more depending on how you cut your chicken)
  • 1 1/2 cup bbq sauce (not too sweet!)
  • 4 apples, peeled, cored and coursely chopped
  • 2 Tbsp balsamic vinegar or lemon juice (basically a bit of acid)

Next, cut up the chicken breasts into chicken tender size pieces. You don’t HAVE to do this but I wanted my chicken to cook faster and I like a higher bacon to chicken ratio. Try to make your chicken pieces approximately the same size. Wrap each piece with bacon. I used approximately 1/2 of a piece of bacon per piece of chicken.

Preparing the Apple BBQ Sauce

In a medium bowl, stir together the 4 apples coursly chopped, 1 1/2 cups bbq sauce and 2 Tbsp vinegar or lemon juice. I picked a bbq sauce that was pretty plain ie not too peppery but also not too sweet. I didn’t want to make this an overwhelmingly sweet dish.

Add the apple bbq sauce to the chicken

Dump the apple bbq mixture on top of the chicken pieces in your crockpot. No stirring necessary. Cook on high for 4 hours (mine was done in about 3 1/2 because I was late putting it on and needed dinner a bit earlier if possible) or on low for 6-8.

Serve the chicken pieces with rice and top with a bit of the apple bbq sauce. You will have MUCH more sauce/liquid than you need for the chicken so don’t think that you need to use it all…you don’t. Also, I think you could totally add more chicken to serve more people without using more sauce. It would still work.

My entire family loved this recipe. It was the perfect dinner for a busy day visiting with neighbors and going out on the boat. I love using my Crock Pot during the summer as well as in the winter when it is more traditional to use it. Bacon wrapped chicken smothered in apple bbq sauce is perfect for busy night supper any time of the year.
