Cream Cheese Apple Enchiladas
Years ago I worked with Old El Paso sharing recipes made with their products. As you can imagine, there were lots of tacos, fajitas, etc. Those recipes went in the bin a while back but this one has stuck around. Who knew that you could make a yummy dessert recipe with tortillas? Cream Cheese Apple Enchiladas are easy, fun and delicious! Need another fun taco dessert? Try strawberry cheesecake tacos! They are perfect for Taco Tuesday or anytime you are looking for a new apple dessert recipe.

Apple Enchiladas
Enchilada Ingredients
- 4 Granny Smith apples, peeled, cored and chopped
- ½ cup granulated sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 6-8 whole-wheat tortillas
- ½ cup softened cream cheese
Sauce Ingredients
- ¼ cup butter
- ⅓ cup brown sugar, packed
- ⅓ cup granulated sugar
- ⅓ cup water
Instructions
Preheat oven to 375 degrees.
Prepare a casserole dish by spraying with cooking spray (6 tortillas will fit in an 11 X 7 pan while 8 will need a 9 X 13 pan or equivalent).

Mix apples, granulated sugar (½ c), cinnamon and nutmeg in a medium bowl. Microwave tortillas for 30 seconds.

Fill each tortilla with apple mixture and approximately 1 tablespoon of cream cheese. Roll the tortilla around the apple and cream cheese.
Place each enchilada seam side down in the prepared casserole dish. Repeat for each tortilla. Pour any remaining apples around the enchiladas in the pan.

In a small sauce pan, heat Sauce ingredients over medium high heat until boiling.

Remove from heat and pour over the enchiladas.

Bake for 40 - 45 minutes or until enchiladas are crisp on top and apples are cooked. Serve with vanilla ice cream.
